Healthy Spiral Pasta in Olives and Tomatoes

Healthy Spiral Pasta in Olives and Tomatoes

Cooking and preparation time: 30minutes

Ingredients:
3 cloves garlic (minced)
10 pieces of olives (pitted and chopped)
2 medium sized fresh tomatoes (chopped)
6 pieces sun dried tomatoes
Lots of celery leaves (finely chopped)
1 salted egg (chopped)
5 teaspoons of olive oil
Spiral pasta (4 small teacups)

Procedure:
Cook pasta until al dente
Mix and prepare all ingredients in a separate bowl
Drain pasta and add a little olive oil
Mix all ingredients with pasta
Enjoy!
(optional: add parmesan cheese)

This recipe makes 3 servings.

You know what I love about this recipe? I get to focus only on the really good stuff: olives, tomatoes and you can play around with the greens as well. Personally, I prefer celery, plus I get to add my favorite salted egg in the dish. Yummy!
